Specialty Cakes and Pastries

This course engages students in advanced cake mixing techniques. Students are expected to apply knowledge and skills introduced in previous baking courses. Students will have the opportunity to bake, assemble and decorate a selection of European-style cakes and pastries such as Sacher, Dobos, opera, mousse torte, cheesecake, French pastries and plated desserts.
