Advanced Nutritional Cuisine will focus on the practical application of menu and recipe development to suit the needs of individual clients. Students will prepare recipes and recipe spec to meet the needs of industry. The knowledge and skills acquired in this course will be used in real-life situations, where cooking demos and counselling of clients is required. For students looking to work in long-term care, retirement communities, and hospitals nutritional segments, this course provides a strong foundation to progress in that segment of the hospitality industry. Students also focus on sensory evaluation, to explore the impacts of food on each of the 5 senses.
