Baking and Pastry Arts Management

To be eligible for admission, you must possess the following:

  • Ontario Secondary School Diploma (OSSD) or equivalent including these required courses:
    • Grade 12 English (ENG4C or ENG4U or equivalent)
    • Grade 12 Mathematics (MAP4C, MCT4C, MDM4U, MCB4U, MGA4U, MCV4U or MHF4U) or Grade 11 C, M or U Mathematics (MBF3C, MCF3M or MCR3U)
    • Two Grade 11 or Grade 12 C, M or U courses in addition to those listed above

Mature Applicants

An applicant is considered a mature applicant if they have not completed secondary school or other postsecondary school, and will be 19 or older (21 or older for degree programs) as of the first day of classes. Humber will invite you for testing to demonstrate that you meet program eligibility. Mature applicants for degree programs will be required to meet course requirements at the U level or equivalent.

College Transfer Applicants

An applicant is considered a college transfer applicant if they have completed some or all of a college-level credential. Humber will use your college courses and grades to determine program eligibility. You may also be eligible for transfer credit if you are admitted to a Humber program.

University Transfer Applicants

An applicant is considered a university transfer applicant if they have completed some or all of a university-level credential. Humber will use your university courses and grades to determine program eligibility. You may also be eligible for transfer credit if you are admitted to a Humber program.

Selection: Admission selection is based on the academic criteria indicated. Meeting minimum eligibility requirements does not guarantee admission.

Additional Costs

$100 – safety shoes; $400 – knife and tool kit; $350– textbooks, manuals (for two semesters). The use of computers is encouraged for research, portfolio development and calculations.

Graduates of any two-year diploma program at Humber who have attained a cumulative grade point average of 70% or greater will be eligible to enter year three of the 4-yr Bachelor of Applied Management (BAM) at the University of New Brunswick. Depending on the diploma program, students may be exempted from study in certain courses and therefore, requested to take alternate courses offered by the Faculty of Business.

Our Program

Humber’s Baking and Pastry Arts Management diploma program, taught in our state-of-the-art baking and pastry labs, is designed to propel you into a career in the baking and pastry industry. Learn how to make impressive confectionary creations such as:

  • chocolate sculptures
  • wedding and specialty cakes
  • tarts and pastries
  • plated desserts
  • artisan breads and breakfast pastries
  • petit fours
  • ice cream and sorbets
  • blown, pulled and cast sugar pieces.

You will gain hands-on experience working in various settings, individually and as a team member to create baking and pastry delicacies.

The first year of this program consists of foundational courses while in second year, you begin in-depth training in baking and pastry arts. You will learn the foundation of traditional and contemporary techniques in baking and pastry arts management exploring measurements, safety and sanitation, and various types of dough. As well, you’ll study the emerging opportunities of this specialized field, international trends and applications used in the industry.

Areas of study in the program also include courses in business and career management, entrepreneurship, and computer skills applications in the food-service industry, as well as strong general education and communications courses.

Courses Learning Outcomes

Upon successful completion of the program, a graduate will:

  • Plan, prepare and present a variety of bakery and pastry products that will meet the diverse needs of food service environments.

  • Identify and produce baking and pastry that is consistent with the emerging trends in the industry.

  • Create, produce and manage a full café menu including baking and pastry arts and related beverages.

  • Apply marketing theories and concepts to a pastry and baking operation.

  • Support the goals of the pastry and baking operation and the responsible use of its resources through the application of kitchen management skills and knowledge.

  • Supervise and manage staff according to accepted human resource management legislation and industry standards.

  • Contribute to the provision of a healthy, safe and well maintained food environment, and to the service of baking and pastry products that are free from harmful bacteria, and other contaminants, with an awareness of potential allergens.

  • Apply fundamental nutritional principles to all aspects of food production.

  • Apply cost control techniques to baking and pastry service operations.

  • Develop strategies and plans to enhance leadership, entrepreneurship, and management in a baking and pastry area for the hospitality environment.

  • Work effectively independently and as a member of a team in the baking industry.

Work Placement

Qualified students will complete an unpaid work placement in the baking and pastry industry in the Greater Toronto Area for seven weeks in the fourth semester (40 hours per week). You will also be able to apply for placements across Canada and Europe, which has jump-started many successful careers.

State-of-the-Art Labs

Our seven on-campus kitchen labs comprise the most modern facilities in the world. Among them are the award-winning culinary demonstration theatre and kitchen lab, induction cooking labs with high-tech exhaust and theatre-style seating and cooking demonstration area.

Student Experience

First year consists of pastry fundamentals, food costing and dessert menu management. In second year, students learn traditional and contemporary techniques as well as emerging opportunities, international trends and applications used in the industry.

Skills Canada Competition

Our program will provide you with advanced baking and pastry training, as well as management skills required to operate a successful business. Our graduates also find employment as bakers and pastry chefs nationally and internationally in a variety of settings including:

Professional Accreditations & Recognition

Qualified students have the opportunity to earn food safety and sanitation certification (TrainCan – BASICS f.s.t.TM Food Safety and Sanitation Certification) as part of the program. 

Humber’s culinary, pastry and culinary apprenticeship programs have been awarded international recognition from the World Association of Chefs’ Societies (WACS) Recognition of Quality Culinary Education program for meeting or exceeding the WACS standards of quality culinary education.

The requirements for the additional credential(s) are determined by the granting body, which is independent from the College. Students are encouraged to obtain the specific requirements directly from the granting body before enrolling.

Study Abroad

Qualified students in this program are eligible to undertake experiential learning experiences such as the Mediterranean trip to Italy where students experience the food, culture and lifestyle of the Mediterranean.

Qualified students are also eligible to undertake a study abroad service learning trip which provides rewarding experiences and opportunities to do community service across the globe.

These trips operate annually in May and are 10 to 15 days in length.

New study abroad trips and initiatives are introduced each fall. Additional fees apply.

Semester Abroad in Taiwan – students in the program are eligible to complete their fourth semester studies in Taiwan in our Semester Abroad program. Experience life as a student in a different country and get exposed to a new culture. Take your learning opportunities out of the classroom and across the globe and gain new life experiences that you can take with you on your career path. The Semester Abroad options operate annually in the winter semester.
