Culinary Management

To be eligible for admission, you must possess the following:

  • Ontario Secondary School Diploma (OSSD) or equivalent including these required courses: 
    • Grade 12 English (ENG4C or ENG4U or equivalent) 
    • Grade 12 Mathematics (MAP4C, MCT4C, MDM4U, MCB4U, MGA4U, MCV4U or MHF4U) or Grade 11 C, M or U Mathematics (MBF3C, MCF3M or MCR3U ) 
    • Two Grade 11 or Grade 12 C, M or U courses in addition to those listed above

All applicants whose first language is not English must meet Humber’s English Language Proficiency Policy.

 

Selection: Admission selection is based on the academic criteria indicated. Meeting minimum eligibility requirements does not guarantee admission.

 


Post-Admission Requirements:

This program follows professional industry standards for decorum, uniform, hygiene and personal presentation. Practical courses, which take place in a lab, have strict uniform and attendance standards and policies, which are mandatory for successful completion of the course.

It is mandatory to wear a Humber-issued chef uniform in practical lab classes in this program. Admittance to these classes is not permitted if you are not in uniform. The cost for the uniform has been added to your first semester tuition fees. In order for the uniform to be available for the first day of class, students must submit their size requirements via an online order form.

The 2016/2017 fee for two semesters was:

  • domestic $5,180.75
  • international $14,200.

Amounts listed were the total of tuition, lab and material fees, uniforms, student service and auxiliary fees for the first two semesters of the 2016/2017 academic year. Fees are subject to change.

Graduates of any two-year diploma program at Humber who have attained a cumulative grade point average of 70% or greater will be eligible to enter year three of the 4-yr Bachelor of Applied Management (BAM) at the University of New Brunswick.  Depending on the diploma program, students may be exempted from study in certain courses and therefore, requested to take alternate courses offered by the Faculty of Business.

Our Program

Humber’s Culinary Management diploma program teaches you the skills you need to excel as a chef in the culinary industry. Work in the world’s finest dining establishments, and take advantage of international study opportunities. Kick your career up a notch by competing in on campus, national and international skill competitions such as the Nestlé Professional Minor’s Food Truck Recipe Competition and the Culinary Olympics.

This program will also prepare you to to design, organize, implement, serve and execute your own dinner event in the “Chef's Table” course. Using a market-related themed menu, mise en place and à la carte cooking, students will showcase classical and contemporary techniques and skill. Flavour and presentation are constantly evaluated by the chef instructor.

The Charcuterie and Advanced Gardemanger courses involve students using contemporary level food presentation, styling techniques and becoming proficient with various butchery processes on a wide range of meats. The Emerging Trends course is unique among Ontario colleges.

Students also have the opportunity to experience preparing meals on the Humber Food Truck, Humber’s new classroom on wheels.

In addition, students work alongside some of the country’s best chefs. Students receive unmatched face time with several leading chefs about what’s happening in today’s restaurant scene and food industry.

Note: A fast-track program is implemented for the January start. The first semester (January to April) is immediately followed by the second semester (May to August), resulting in a shorter summer break. The third semester begins in September, allowing students to complete the two-year program in just 16 months.

Work Placement

Qualified students will complete work placements in the kitchen of a leading hotel or restaurant of their choice for seven weeks unpaid in the fourth semester (40 hours per week). Students are also able to apply for placements across Canada and Europe, which has jumpstarted many successful careers.

Professional Accreditation, Endorsement and Recognition

Qualified students have the opportunity to earn the following certifications:

  • TrainCan – BASIC Food Safety and Sanitation Certification (BASIC f.s.t.TM)
  • Wine & Spirit Education Trust (WSET) Level 1

This accredited program also provides students the opportunity to gain hours required for Red Seal Certification.

Humber’s culinary, pastry and apprenticeship programs have been awarded international recognition from the World Association of Chefs’ Societies (WACS) Recognition of Quality Culinary Education program, for meeting or exceeding the WACS standards of quality culinary education. Humber College is the only institution in Canada to receive this accreditation.

Note: The requirements for the additional credential(s) are determined by the granting body, which is independent from the College. Students are encouraged to obtain the specific requirements directly from the granting body before enrolling. 

Study Abroad

Qualified students in this program are eligible to undertake experiential learning experiences such as the Mediterranean trip to Italy where students experience the food, culture and lifestyle of the Mediterranean.

Qualified students are also eligible to undertake a study abroad service learning trip which provides rewarding experiences and opportunities to do community service around the globe.

These trips operate annually in May and are 10 to 15 days in length.

New study abroad trips and initiatives are introduced each fall. Additional fees apply.

Semester Abroad in Taiwan – students in the program are eligible to complete their fourth semester studies in Taiwan in our Semester Abroad program. Experience life as a student in a different country and get exposed to a new culture. Take your learning opportunities out of the classroom and across the globe and gain new life experiences that you can take with you on your career path. The Semester Abroad options operate annually in the winter semester.
