Simon was set on a professional culinary career at the age of fifteen after taking a summer job as a prep cook at a local restaurant in Burlington, Ontario. He found the excitement, energy and pace of the kitchen exhilarating and he was instantly hooked and knew his path. Simon began his professional culinary career in 1991 as a Cook Apprentice at the prestigious Glen Abby Golf Club in Oakville, Ontario. He went on to gain experience in many facets of the culinary field including some of the top hotels, restaurants and private clubs in the GTA, most notably the Sutton Place and Westin Harbour Castle hotels.
Prior to becoming full-time Culinary Faculty at Humber, Simon was employed by ClubLink Corporation as an Executive Chef at four of their most prominent golf courses. In his final posting with ClubLink, he returned to Glen Abby Golf Club as Executive Chef, where aside from the day to day requirements of a private club, he planned and executed culinary operations for the nationally televised RBC Canadian Open professional golf tournament for several years. Simon is a Certified Chef de Cuisine and a graduate of the Cook Apprentice program through the Ministry of Skills and Development. He has enjoyed teaching and authoring a variety of courses at Humber College since 2010 and enjoys inspiring new chefs and helping them to start their culinary journeys. Simon lives in Waterdown with his wife Katherine and son Willem.
